Q1. How long have you been living a Plant Based lifestyle and how did it all begin?
5 years – I began because my mom read the book “Skinny Bitch”, tested it out for a week and was glowing. She recommended it to me and I felt phenomenal after a week as well and learned how to stick with it. The more I learned the more I realized how important all aspects of a plant based diet were to me. Animals, environment and health.
Q2. Were there any challenges in transitioning to Plant Based living & what did you do to overcome them?
Yes, I thought I would be lost without cheese…I over came that with vegan cheese and now there are so many options it’s awesome. I don’t even think about it now.
Q3. How do you feel today & what are the most significant areas of change for you?
I feel awesome! Proud that what I eat doesn’t harm any animals, that it helps the earth’s sustainability, and I feel so much better after I eat a meal. I also lost a few pounds in my journey so can’t complain 🙂
Q4. Can you tell us what your diet is like right now and are there any goals you are aiming for?
My diet is free of any animal products, lots of green smoothies but also enjoy seeking the best vegan eats around. My goal would be to stick to a fully oil free plant based diet.
Q5. Is there anything in particular at VegOut that you feel helps you to achieve your goals?
Yes, VegOut reminds me how easy and accessible eating plant based is. It also allows me to stay morally vegan with awesome clothing/footwear options!
Q6. What is the one insight or learning that you could share that might make someone else's journey to Plant Based living easier?
It’s honestly so much easier that you can imagine, I promise. It seems so crazy in the beginning but there are so many amazing options that you soon find the simplicity of it. The China Study Cook Book is where I would start, and always remember what your craving can always be made vegan.
