Happy Earth Day!
One of the most powerful choices we can make to change the course of our health and the health of our planet is to choose a healthy whole food plant based vegan diet – and what better day to start than Earth Day?!
A healthy vegan diet will help your body heal and thrive, it will help our beautiful planet and it will help animals! So in honor of this wonderful day we’d like to share a favorite recipe of ours with you today.
Healthy Vegan Waffles
1) Wash & prepare (or defrost) 1 cup blueberries.
2) Next prepare waffles. Mix together:
- 1 cup rolled oat flour
- 1 ripe banana
- 1/2 cup water
- 1t vanilla bean powder
- 1t cinnamon
Pour batter into waffle iron and cook until brown.
3) Meanwhile blend in high-speed blender:
- 2 bananas
- 2 Medjool dates
- 1t raw vanilla bean
When waffles are done place on plate, top with vanilla-banana ‘Creme’ & then blueberries. Drizzle with organic maple syrup and top with True Cinnamon. Enjoy!
